White Kibble

We were sharing a container of white kibble that looked like malformed rice and tasted like the unholy offspring of a chicken and a mushroom.

Warning! I’m not a chef! I just like food The Expanse book series and this is my own White Kibble interpretation.

The “white” in White Kibble must be a sort of chopped/chunked mushroom product that is meant to taste like chicken.  The cheese flavor sounds like a fake cheese and mushroom sauce that covers the kibble. It’s also peppery…White kibble can be eaten on its own or with over your favorite carbohydrate mass!

A vegan/vegetarian bechamel or cream of mushroom sauce seems the closest match. Bechamel sauce has fewer moving parts, so went with it.

Let’s get peppery and cheesy, y’all!

White Kibble (4 Servings)

INGREDIENTS (You can use non-vegan/vegetarian products too.  It tastes a hell of a lot better that way!)


  • *1 packet of frozen Quorn Meat Pieces product
  • 8 oz White Mushrooms (chopped)

*Please do some research on Quorn before you consume it.  I’ve been eating it for a while and haven’t had a single issue.  Look it up before you dive it.

White Kibble sauce

  • (6 Tbsp) Vegan Butter
  • (5 Tbsp) Flour
  • (2 Cups) unsweetened Soy Milk (any unsweetened non-dairy milk)
  • (1 Tsp)Black Pepper, or more!
  • Salt to taste
  • (1 cup) shredded Daiya Mozzarella (or any vegan white cheese product)
  • 1 pinch of cumin



On medium heat and in a sautee/frying pan, cook your rinsed and chopped mushrooms.

Add salt so that they release their juices.

Then add the Quorn Meat Pieces. Cook on low until brown.
Set this on low and start the sauce.

The White Sauce

In a large saucepan, melt the butter on medium heat.

Add flour a little at a time, while constantly and vigorously stirring.
It can burn easily, so watch it closely as you stir all the flour into a nice liquid without lumps.
Pour in your milk and stir until it thickens gradually.
Turn to high heat until it boils.  Never stop stirring.
While stirring, mix in the salt and pepper.

Don’t forget to add the cheese! I did 😛

Stir constantly while it thickens. The time it takes depends on the kind of milk you chose. Sometimes it will be a proper thickens at boiling point. JUST WATCH IT CAREFULLY.

Stir in your Quorn and mushroom pieces and mix well.
Switch to low, let your white kibble simmer for 8-10 minutes while occasionally stirring.
It solidifies super quickly, so plate it immediately for Belter comfort food!

Garnish with a small pinch of cumin on top.
Et voilà! White Kibble!
Enjoy it as is, or over rice or pasta.
